I must admit I do have a sweet tooth and sometimes just like treating myself to something nice but on the healthy side. I found this recipe when I was fundraising to climb Mount Kilimanjaro and wanted to bake something vegan so that there was a cake for everyone. I liked it so much that now, every time I make banana bread, I always go do it this way!
– 3/4 Ripe Bananas
– 75g Vegetable Oil
– 100g Brown Sugar
– 225g Flour
– 3 tbs Baking Powder
– 3 tbs Cinnamon
– 50g Dried Fruits/Nuts/Dark Chocolate (Optional)
Heat oven to 200C. Mash the peeled bananas with a fork, then mix well with the oil and sugar. Add the flour, baking powder and cinnamon, and combine well. Add the dried fruit, nuts or dark chocolate if using.
Bake in a greased loaf tin for 20 minutes. Check and cover with foil if the cake is browning. Bake for another 20 minutes, or until a skewer comes out clean.
Allow to cool a little before slicing while you make yourself a cup of tea!
