Coconut, Spinach and Kale Soup..

Soup for the soul! There is something so comforting about eating soup on a cold and rainy winter evening that I always have a portion of it in a tupperware in the freezer.. for emergencies! This is also a gut-friendly recipe that will prevent or help against any bloating.

INGREDIENTS:
  • – 1 tbs Coconut Oil
  • – 2 Garlic Cloves
  • – 1 Onion
  • – 650ml Vegetarian Stock
  • – 400ml Coconut Milk
  • – 450gr Mixed Kale and Spinach
  • – 1/2 Lemon Zest
  • – 1 tbs Cayenne Pepper
  • – 1 tbs Ground Nutmeg
  • – Sea Salt and Pepper
PREPARATION:

Heat the oil in a large saucepan, then add the garlic and onion and fry for a few minutes until soft.

Pour in the stock and cook for 5 minutes, then add the coconut milk and bring to a simmer.

Add the spinach and kale and lemon zest. Let is simmer for 10-15 minutes, then add in the spices and seasoning. Blend the mixture in a food processor.
