Soup for the soul! There is something so comforting about eating soup on a cold and rainy winter evening that I always have a portion of it in a tupperware in the freezer.. for emergencies! This is also a gut-friendly recipe that will prevent or help against any bloating.
- – 1 tbs Coconut Oil
- – 2 Garlic Cloves
- – 1 Onion
- – 650ml Vegetarian Stock
- – 400ml Coconut Milk
- – 450gr Mixed Kale and Spinach
- – 1/2 Lemon Zest
- – 1 tbs Cayenne Pepper
- – 1 tbs Ground Nutmeg
- – Sea Salt and Pepper
Heat the oil in a large saucepan, then add the garlic and onion and fry for a few minutes until soft.
Pour in the stock and cook for 5 minutes, then add the coconut milk and bring to a simmer.
Add the spinach and kale and lemon zest. Let is simmer for 10-15 minutes, then add in the spices and seasoning. Blend the mixture in a food processor.
